Byarozavik birch tree water is harvested from actual birch trees. The process is much like maple syrup harvesting – except ours isn’t boiled down to a syrup! Our birch tree water goes from the trees into containers without being reformulated or fortified in any way.
The harvest season is typically short, and occurs only once a year in the spring as sap begins to move from the tree roots to the budding leaves. We follow traditional harvesting methods, selecting ecologically pure forests and tapping trees by hand to collect their sap. No trees are harmed during the harvesting process – rather, they are preserved, so they can continue producing for their natural lifespan. Birch water harvesting saves trees and their natural environment - which is more economically profitable than cutting the trees down for lumber.
